- 2 6 oz Cod Loins Boneless and skinless
- 2 whole egg whites
- 1 cup corn flake crumbs
- .25 cup corn starch
- 1 tsp paprika
- 1 tsp mrs. dash
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 spritz avocado oil to coat fish turn crispy in the air fryer
Cauliflower rice
- 500 grams Cauliflower Rice Frozen is optimal
- 0.5 small white onion minced finely
- 2 cloves garlic minced finely
- 1 tsp avocado oil cold pressed
- 1 dash sea salt to taste
Mango salsa
- 1 med/large Mango diced
- 0.5 small red onion diced
- 1 small lime juiced
- 1 dash sea salt to taste
Chipotle Yogurt Topping
- 100 g greek yogurt 0% fat preferred
- 1 tbsp chipotle hot sauce
- 0.5 small lime juiced
Instructions
For breading the Cod
- Prepare your station by arranging three plates or shallow dishes side-by-side, left to right, to create an assembly line for coating the cod loins.
- In the first plate or shallow dish on the left, combine the cornstarch with the desired spices, stirring them together until thoroughly mixed. This will create the initial coating for the cod fillets, imparting flavor and helping the egg whites and cornflake crumbs adhere properly.
- In the middle bowl, vigorously whisk the egg whites until they become frothy and slightly thickened. This will create a sticky base for the cornflake crumbs to adhere to the cod fillets, ensuring an even and crispy coating.
- In the third plate or shallow dish on the right, spread out a generous amount of cornflake crumbs, making sure they are evenly distributed. These crumbs will provide a crispy, crunchy texture to the coated cod fillets, giving them a satisfying contrast with the tender fish and soft cauliflower rice.
- Gently pat the cod loins dry using paper towels or a clean kitchen cloth to remove any excess moisture from the surface. This step is essential as it ensures that the coatings adhere properly, creating a crispier and more flavorful result.
- Slice the cod loin lengthwise down the center, from top to bottom, to create two equal halves.
